Southern Flavours at Rayavadee

Rayavadee Krabi in Thailand is presenting the distinctive flavours of the south from 1 – 15 April 2016 with a special menu by Chef Amphan Chaiawan of Krua Phranang restaurant, featuring a selection of home-cooked southern Thai recipes that highlight the very best the region has to offer.
Chef Amphan, or 'Auntie Paan' as she is affectionately known, has been heading Rayavadee's Thai restaurant, Krua Phranang, for more than a decade. Hailing from the southern province of Nakhon Si Thammarat, it is with pride that Chef Amphan showcases her family recipes of classic southern dishes including Sator Phad Ka-Pi Goong Sod, shrimp and shrimp paste wok-fried with pungent Petai beans and Kua Kling Moo Saep, minced pork coated with fiery-hot Kua Kling spice paste: a mixture of chilli, garlic, turmeric and kaffir lime leaf.
Southern cooking is well-known for its spiciness and combination of local herbs, vegetables and the bounty of the sea which results in simple, wholesome dishes that pack a flavoursome punch. Other tempting favourites on offer include Yam Pak Gude Hoy Shell, a spicy Thai salad with a mouthwatering mix of scallops and crispy young fern shoots tossed in a dressing of chilies, lime and fresh garlic and the popular Pla Kra-Bok Tom Som, a hot and sour mullet fish soup packed with the herbal benefits of lemon grass, shallots and turmeric. Nam Prik Goong Sod, a shrimp dip with fresh chilies, lime and shallot served with selection of fresh vegetables, is another dish much loved by southerners and which is featured on the menu. Diners can refresh their post dinner palates with the cooling properties of Kanom Ko, a delicious southern sweet rice dumpling served with shaved young coconut perhaps best enjoyed with a cup of fragrant organic forest coffee.
