Dessert Queen Creates Delicious Kulfi Dessert Cups

Former MasterChef winner Emelia Jackson has created this impressive dessert to delight your guests!

Her Parle G and Honey Filo dessert cups feature new premium Indian ice cream,  Katoomba Kulfi Parle G and Katoomba Kulfi Hide & Seek, recently launched in Australia by Katoomba Foods.

Parle G Kulfi and Honey Filo Dessert Cups

Prep time: 15-20 mins
Cook time: 20-25 mins
Serves: 6

Ingredients

Honey baked filo 
100g unsalted butter
65g honey
½ tsp ground cinnamon 
Pinch of salt
3  sheets filo pastry 

To serve

2 tubs Katoomba Parle G Kulfi ice cream
70g slivered pistachios, toasted
1-2 tablespoons rose petals 
Parle G Biscuits, crumbled
1 large mango, diced

Method

  1. Preheat the oven to 160C fan force and line a baking tray with baking paper. 

  1. For the filo pastry, melt together the butter, honey, cinnamon and salt until everything is dissolved. 

  1. Place the filo onto the prepared baking tray and pour over the melted butter mixture until the filo is completely coated. Bake for 20-25 minutes, or until crispy and deeply golden brown. Allow the filo to cool completely before breaking into large pieces. 

  1. To assemble, place 1-2 large scoops of the kulfi into your dessert glass, and top with 1-2 tablespoons of the diced mango before sprinkling over the pistachios, rose petals and crumbled parle g biscuits. Finally, dress with a large sheet of caramelised filo pastry.
